Bigarade

The bigarade, fruit of citrus aurantium, better known as bitter orange, has been cultivated since the eighteenth century in the Pays de Grasse.
Green, under-ripe, its zest develops bright and fresh notes of citrus, which evolves, when ripe, into complex notes of candied orange.

In Vallauris and Bar-sur-Loup, we are working to structure and develop the bigaradier sector alongside the producers of the Nérolium cooperative, while working on the transformation of this winter sun into hydrosols, alcoholats, macerates of “coulanes”, Provençal name of the dried zest of bigarade.

The harvest started at the end of January and will continue until the end of February: we wish a nice pick to our local producers!
